Dairy free Southern Style Cobbler (Vegan, Kosher, with Gluten free Modification)

Tools: Oven safe baking dish, stove top pan

Preparation time: 30 minutes for filling plus 30-45 minutes to bake

Ingredients:

1/4 cup melted butter

Cobbler Batter

3/4 cup self rising flour

3/4 cup milk of choice

1/4 cup sugar

Fruit Filling

2 cups fruit

1/2 cup sugar

1 tbsp. cinnamon

1/8 tsp. nutmeg

Fruit Filling:

Combine peeled fruit, 1 cup water, sugar, and spices. Bring to a boil, reduce to a simmer stirring occasionally until thick.

Melt butter in 350 degree preheated oven (in the baking dish you will be using.)

I know you want to stir, but be strong.

Batter:

Whisk together flour, sugar and milk. Pour over butter (do not stir!)

Pour filling over melted butter and batter. Spread fruit over baking dish evenly, careful not to stir the mixture too much. For some reason it works best when the butter remains separate from the batter. (Southern Voodoo perhaps?)

Bake at 350 for 30-45 minutes, until golden brown and delicious.

Variations:

Gluten Free: Substitute all purpose gluten free flour mix of choice plus 1 tbsp. plus 1 tsp. baking powder.

Fruit Combinations: Endless. Blueberry peach. Peach Apple. Blueberry and blackberry. Strawberries, blueberries, blackberries, and raspberries.

Prefer Whole Wheat Flour? make half of the 2/3 cup whole wheat and the other half white flour. Add 1 tbsp. plus 1 tsp. baking powder. If you prefer you can use all whole wheat flour but the cobbler topping will be more dense.

I’m not over peach season. Not by a long shot.

I love cobbler so much I once had it instead of a birthday cake. Oh, the crisp crust and gooey fruit filling. Rapture! This is just as marvelous with blackberries or blueberries. There are those who love a good apple cobbler- I’m sure I’ll make one in the fall. Peach has to be my favorite. Of course I’m biased, I was born in Georgia after all.

Time to talk about a favorite gadget. Heat proof spatulas. Click here to get some on Amazon. I often rest a spoon or spatula on the pan I’m cooking in. This is a mistake when I go to pick it up and the metal handle has heated up. These won’t damage your nonstick pans and you can even leave them in the pan while it cooks and pick them up by the handle burn free. Magical for a one handed distracted mom cook. They’re also dishwasher safe and will last you forever.

This beauty was baked for my visiting family. These brave souls visited Georgia in July! At one point I made them sit in rocking chairs and talk about how hot it was. Don’t worry, sweet iced tea was offered. I had so much fun serving this cobbler to guests and would you believe it? There are just enough leftovers for me to have some for breakfast. Come. To. Mama.
