Tools: Cutting board, sheet pan, aluminum foil (optional)
Prep time: 5 minutes active, 45 minutes cook time
3- 4 potatoes, well scrubbed if keeping skin on or peeled
2- 3 tablespoons oil (I’m using sunflower)
1 tbsp. each of smoked paprika, onion powder, garlic powder, and dill
Salt and fresh ground pepper to finish
Slice potatoes into wedges. Toss in oil and spices. Place prepared potatoes onto sheet pan covered in aluminum foil. Flip after 20 minutes in oven. Roast at 425 degrees until golden, brown, and delicious.
This is a great way to do many vegetables! You can roast carrots, sweet potatoes, even asparagus does well with this method. All you will need to do is adjust your cooking time.
Adding diced onion to this would also be mighty tasty.
For a one pan meal, add a protein. Mine have sliced Polish sausage that I added the last 5 minutes of cooking time. You could also add uncooked shrimp or fish and allow to cook with potatoes the last 10 minutes, or firm tofu diced in chunks.
You can also use any spice blends you wish!
Sometimes you need a meal you can whack in the oven and continue with chores.
Today was such a day.I scrubbed like a maniac as my baby napped. Want a cleaning tip? Spill some toilet bowl cleaner on the bathroom floor to make your bathroom smell oh-so-fresh. I guess I’m not ready for a cleaning blog. I do cleaning like I do grocery shopping, overboard so I hopefully never have to do it again.
Our baby has come to this marvelous giggling phase. We lay on the floor with him for hours rubbing his belly just to hear him laugh. He also loves the bath so much he cries if he hears water running and doesn’t get to play in it. These are the days that dreams are made of.
Sure, I could say I’m doing a potato recipe a day late for Saint Patrick’s day, but honestly I wanted something tasty and very easy.This also smells so good as it’s roasting in the oven. And cleanup? Can you throw away aluminum foil? Good. You may also want to introduce these potatoes to Los Tres Ranchos ranch recipe for dipping. They go very well together.
