Tools: Saucepan, cutting board
Prep time: 30 minutes active, at least 2 hours chill time
1 hard boiled egg, peeled and diced
1 carrot boiled, peeled and diced
1 large boiled potato, peeled and diced
1/3 cup diced Kolbasa or Polish Sausage, fully cooked, diced
1 whole pickle, diced
1/4 cup frozen peas, thawed
mayonnaise to taste
fresh ground pepper, 1/8 tsp
1 tsp dried minced onion, smoked paprika
1 tbsp. dill
Season salt to taste
Method: combine all ingredients except for salt, add enough mayonnaise to preference. Allow to chill in the refrigerator at least 2 hours, add seasoning salt to taste.
Vegan: Omit hard boiled egg and Polish sausage, substitute Vegannaise for mayonnaise. Double smoked paprika to 2 tsp.
There are many additions you can make- celery, additional carrots, diced red onion, omitting peas, whatever you like!
I have many beautiful memories of Ukraine.
All my writing can only scratch the surface. I remember the first time I visited. My friend and I were shopping the ancient streets among the gilded boxes, embroidered linens, and Soviet era relics for sale. A sweet melody drifted to us. Rounding the corner came a crowd following a bride and groom. All were dressed in hand embroidered linen, the bride’s head adorned with flowers and ribbon. My friend told me in all her years she had never seen a traditional Ukranian wedding like this. I felt like the country itself had given me a love note.
The red sash pictured above with my recipe is Ukranian, one of my treasured tokens. It’s a reminder of all those I love and their beautiful spirit. It reminds me of weddings, churches, castles, music, smiles, and friends. Sending all my love to you, Ukraine.
This salad is delicious and very classically Ukranian. I hope my friends will overlook the improvisations I have made, Kolbasa is not easy to find here. I think the Polish Sausage makes a fine substitute. The next time you need to bring a potato salad, consider cooking out of the border! And if anyone asks you, this salad name is pronounced “Oh-live-Eee-Yay”
