A Moveable Feast (Antipasto skewers)

Tools: Cutting board, knife, bamboo or wooden skewers

Prep time: Approximately 20 minutes

Cook time: None

Ingredients: 1 block mozzarella cheese (about 16 oz.)- diced

1 can pitted black olives- drained

1 small container cherry tomatoes- washed

3 oz. sliced Proscuitto- torn into smaller pieces

2 oz. balsamic reduction

Method: Skewer! Let out some stress while you’re at it. I alternated cheese, Proscuitto, olives. I refrigerated overnight (for convenience) and added tomatoes right before serving. Allow to come to room temperature- about 10 minutes. Drizzle with balsamic reduction.

Variations: Absolutely endless. Some ideas…

German: black forest ham, Emmentaler or Butterkaese cheese, rye bread cubes, serve with mustard

Spain: Serrano ham, Manchego cheese, Spanish olives

Italian: fresh mozzarella balls, fresh basil, Proscuitto, pickled Antipasto such as banana peppers. Drizzle with pesto if you like!

Prosciutto could also go beautifully with some cantaloupe.

Vegan: fresh basil, cherry tomatoes, toasted bread cubes seasoned with oil, garlic, and onion powder. Top with balsamic reduction. Call it Panzanella salad on a stick (Fancy!)

You could also do all your favorite pickled vegetables for a classic Antipasto.

‘Man’ skewer: all the smoked meats and cheeses you can think of! You should probably serve this to a horde of men with beer and sweet mustard for dipping.

This dish is like a little black dress. Dress it up, dress it down.

I’ve had lots of fun thinking up variations on this idea, my inspiration for this version was the theme ‘spa day’ at my Bible study. It was tough thinking up something “Fiddly” As the Brits say. I also remembered a beautiful wedding where quality fresh and pickled vegetables were laid out and it was just so elegant.Finally I hit on this idea with very classic flavors. It’s simple and easy, but it looks really nice.

I wanted to do something very special for these ladies. When we were going through a difficult time these ladies prayed for us, fed us in abundance, lent an ear, gave hugs, shared the joys and pitfalls of new motherhood with me. In so many ways they restored the heart I once had, generous and full of joy.

Please accept a sincere thank you from me, you’ve supported a dream I’ve had for some time that’s been fermenting away (like the word choice?) I consider it a compliment and privilege to share my thoughts and recipes with you all.
